BLACKBERET CHARDONNAY

A fresh, satisfying white with a subtle hint of oak

Vineyards

Vineyards from Carcassonne and the Minervois selected for the flavour of the grapes and the low yields.

Winemaking

The grapes are chilled before pressing and then cold settled before fermentation of the clear juice. Around a third of the wine is fermented in French and American oak barrels, and remains on lees in the barrel, with stirring, for six months. A small (15%) proportion of Viognier is included in the blend to add complexity and an exotic touch.

Tasting notes

Pale yellow-green colour. Fresh pineapple character on the nose, with the Viognier adding mango and ginger aromas. Fresh yet satisfying on the palate, with subtle, well-integrated oak.

BLACKBERET GRENACHE SYRAH

A rich yet soft red, combining red fruit and spice

Vineyards

Vineyards from Carcassonne and the Minervois selected for the flavour of the grapes and the low yields.

Winemaking

The two varieties are vinified separately. All the grapes are chilled and soaked for a few days to favour extraction of fruit flavours, then fermented for two weeks before pressing.

Tasting notes

Deep red colour, purple at the rim. Intense aromas of vanilla, coffee, red fruit, spice and herbs. Rich yet soft on the palate, with well-integrated tannins. Good length.

BLACKBERET PINOT NOIR

A rich yet soft red, combining red fruit and spice

Vineyards

Cooler climate, high-altitude vineyards from around Limoux.

Winemaking

The whole bunches of grapes are chilled and soaked for a few days to favour extraction of fruit flavours, then fermented for two weeks before pressing. Traditional punching down is used to break up the cap and maximise extraction of fruit and colour.

Tasting notes

Medium depth of colour with juicy, red forest fruit flavours of strawberry and raspberry and a hint of pepper. The small proportion of oaked wine in the blend adds complexity.
